Recipe - Speculoos Cookies


My boyf's favourite cookies, Speculoos. Originally from Denmark and traditionally eaten at Christmas, these popular biscuits have been popularised by hotels all over the continent. They're the kind that you'll find in little packets with your tea and coffee in any self-respecting hotel room. They're delicious and super-easy to make:







100g plain flour
2 tsp cinnamon
1 tsp ground ginger
1 tsp freshly grated nutmeg
1 tsp baking powder
½ tsp salt
50g soft muscovado sugar
1 tbsp milk
75g butter

1. Preheat oven to 180 degrees
2. Bring all ingredients together and use hands to form a dough
3. Roll to .5cm thick
4. Bake for about 18 minutes or until golden brown.
