Recipe - Creamy Mushroom Soup

This week I've been perfecting my creamy mushroom soup recipe. We've had heavy snow in the UK this week, and nothing warms my cockles like a warm bowl of soup, mushroom soup in particular always seems to hit the spot. I find that people either love or hate mushroom soup, but for me it's up there with my favourites. ½ red onion 2 cloves garlic 300g mushrooms, sliced 1tbsp rosemary  50g butter 100ml soya milk Fry the onion and garlic in the butter until soft (not brown) Wipe any soil off the mushrooms and chop roughly Fry the mushrooms until lightly brown. In a food processor, add all ingredients and whizz up until creamy. Warm on the stove until  piping hot Serve and enjoy

Recipe - Speculoos Cookies

My boyf's favourite cookies, Speculoos. Originally from Denmark and traditionally eaten at Christmas, these popular biscuits have been popularised by hotels all over the continent. They're the kind that you'll find in little packets with your tea and coffee in any self-respecting hotel room. They're delicious and super-easy to make: 100g plain flour 2 tsp cinnamon 1 tsp ground ginger 1 tsp freshly grated nutmeg 1 tsp baking powder ½ tsp salt 50g soft muscovado sugar 1 tbsp milk 75g butter 1. Preheat oven to 180 degrees 2. Bring all ingredients together and use hands to form a dough 3. Roll to .5cm thick 4. Bake for about 18 minutes or until golden brown.
